I know this article is about colour, but just just the other day I saw something shared on social media that caught my attention. It was about all the fake elements they use – for example shaving cream instead of real cream in desserts (it doesn’t melt) and shoe polish on burger patties (to make them look charred, nice and dark).

Do you also use (colour) substitutes to make food items look brighter and better, or do you prefer to keep it naturally colourful?

It depends on the kind of seafood you have. I would use blue tones that bring the idea of water and create contrast. However, try some different analogous and complementary colors based on the seafood.
